Another Michelin star for Mallorca – Zaranda in Castell Son Claret

For Fernando Arellano, a dream has come true: at the prestigious award ceremony of the Guide Michelin Spain on the mainland in Santiago de Compostela, he and his Zaranda team have been awarded with the second star – making Zaranda at the 5* Hotel Castell Son Claret in Es Capdella in Calvia, the only two-star restaurant on the island of Mallorca!

“My team and I are incredibly honoured to receive this amazing accolade and extremely proud to bring back a two-star restaurant to Mallorca, which - together with my six Michelin-starred colleagues will position the island as a top culinary destination. I feel especially grateful to the owner of Castell Son Claret, Klaus-Michael Kühne, for his support and his on-going trust in our work. I feel blessed that we have found the perfect place for Zaranda at the Hotel Castell Son Claret, which not only provides a most inspiring background but also a reliable and supportive team making it an ideal platform to expand on our culinary ambitions”. Having been able to celebrate such a desired recognition in an amazing town like Santiago - which happens 20 years after I walked into a professional kitchen for the first time and 9 years after gaining the first Michelin Star with my team, is my lifetime dream come true”, said Fernando P. Arellano when receiving the prestigious accolade.

Supported since the beginning by his former wife and now partner Itziar Rodriguez, the 37-year-old chef from Madrid was already recognised as “newcomer of the year“ and “Chef of the year“ over the past years. Before Arellano opened in 2005 his own restaurant “Zaranda” in Madrid, he was stationed in the “Patrick Guilbaud” in Dublin,in “Le Gavroche” in London, in “Don Alfonso” in Naples or in “Can Fabes” in Barcelona. In 2010, the chef Arellano moved with his entire team to Mallorca, where he was re-inspired by the local Mediterranean cuisine. Since May 2013, the Zaranda restaurant at Hotel Castell Son Claret is his territory where he could defend the Michelin star in the first year.

According to himself, the award-winning chef has found his own Garden Eden at the historical refuge Castell Son Claret, where he can- culinary speaking- spoil his guests and cater to their every wish. Zaranda offers a combination of culinary pleasures and extraordinary ambience. Through small glass incisions guests have a direct view into the well kept kitchen. Custom-made Mallorca arts out of iron, complete the rather minimalistic interior for the restaurant. In addition, the historical inner courtyard with the Renaissance fountain serves as a terrace during the summer, creating a magical atmosphere in the centre of the hotel. With local produce, fresh from the market, as well as local spices and aromas Fernando P. Arellano creates amazing compositions. Specialities like the “Glazed Pavé of the veal with leak and potato salad“ or “Four seasons of the Mallorcan almond“ show the ingenuity and the creativity of the Zaranda kitchen. The famous “black egg“, a creation from egg with a blackened skin from sepia and caviar of Calamari is well known beyond the island of Mallorca.
